I am so glad to hear that, Keddy! I am passionate about the artificial sweetener thing. I even wrote an article called , "Killing us Softly. . ." A very dear friend of mine finally let go of sweet-n-low and when she called me to tell me she was now using "real sugar in the raw" in her coffee, I cried. (tears of joy) So many women are literally killing themselves with that stuff to "save calories." I make my own kombucha and that's what I drink as my afternoon treat. It has a little fizz and very little sugar (only 2 grams) plus probiotic health benefits. I also have mineral water in the house and I put a little splash of cranberry juice in that with a squeeze of fresh lime. Yum!  Congratulations!

A postscript to our discussion below - I looked for and was happy to find some diet ginger ale sweetened with stevia, so that's go to be an improvement! One such soda in the middle of the afternoon is a good treat for me.

You're right - the tv story only confirmed my suspicions. Sometimes it takes full saturation in the popular culture for change to come. Perhaps this adds momentum to the anti-diet soda wave, and hopefully our food culture will start moving towards better alternatives. Sometimes we need to be pounded on the head (and stomach?) a bunch of times before we let loose of such bad habits! I'll be working on it. Guess I've been in denial.... Cheers - KAO

If there is one thing you should give up entirely it's diet soda—huge endocrine disruptor. My clients actually lose weight when they give up the diet soda and that's before we even begin upgrading their food. I'm happy to tell you more about that but only if you're interested. I don't want to get on my soap box! LOL

Sue Ann - I wanted you to know I've been using the agave nectar a bit, finding it delightfully delicate. I am sitting here waiting for the Today show to cover what's wrong with diet sodas.... I still indulge in a diet gingerale once a day, but for my other bubbly needs I stick to bubbly water and sometimes add a little pomegranate juice, although that undoes some of the fizziness. Probably if I looked in Whole Foods, I could find stevia-sweetened gingerale. OK, the tv health alert story is on -- vascular events such as stroke and heart attacks are linked to daily diet soda drinking.... an increased risk at least. Also, as I have heard before, artifical sweeteners somehow make us crave more sugar.... Ah well, all things in moderation except of course for veggies and fruit.

Thanks, Sue Ann - Don't know how I missed your newsletter deal; I just signed up for it.  I meant to make your truffles since I have all the ingredients - maybe for Valentines. If I knew how to make Jelly Bellys w/o sugar, I might be able to cut down on sugar, but they are a  daily treat I'm not ready to give up. I do want to try your polenta cake too. I thought of you when I read my Martha Stewart magazine last night, because they suggested dark chocolate shavings on quinoa, barley or millet for breakfast.

Hey Keddy Ann,

Good topics! I use very few (if any) processed foods in my cooking so I can't help you with the various flours but I did use Bob's Red Mill, non-GMO, organic polenta and date sugar in my Polenta Pudding Cake and it was delicious! I posted that recipe on http://www.facbook.com/chocolateforbreakfast.

 

I like to use agave nectar for a sweetener because it has a lower glycemic index but I use it sparingly. Not crazy about the flavor of stevia but I do like the fact that it comes from a leaf and it's not artificial.

 

Haven't tried yerba mate but I love teeccino! Do you get my newsletter? That's a great place to read up on some of the topics you asked about. I'll try to post here as well!

 

Stay tuned for the polenta pudding cake.  I like to include healthy sweets in my diet so that I don't feel deprived and then binge on them later. The polenta cake was not overly sweet and a small piece was very satisfying. The chocolate truffles (above) are also very good because they're made from prunes, dates, almond butter, and coconut—all very good for you and one truffle is plenty! Enjoy!

I can't find the discussion thread, but got the email about future topics. I'm interested in cutting back on sugar, and want to learn more about alternatives such as agave, stevia, date sugar, etc. Also, I've been hearing a lot about yerba mate, and want the skinny on that. Blue corn interests me - they are my favorite chips, but whenever I've used the flour, the results have been disappointing. Just some random food compulsions. I know I could just use Google, but it would be fun to learn more about these topics on CB, when and if they fit with your posting sensibilities. Thanks!
