And I made these notes from the video about foods we should be eating (three cups per plateful; three platefuls a day):

broccoli
cauliflower
brussel sprouts
cabbage
turnips
rudabega
radish
collards
kale

onion
garlic
leeks
chives
shallots

mushrooms
asparagus

kale (worth mentioning twice)

Fruit & veg with lots of color - beets, carrots, peppers, red cabbage

peaches & oranges

colorful berries

Plus eat plenty of omega 3 fatty acids - found in wild fish such as salmon

seaweed - eat 1x week minimum

I'm convinced! I'm guilty of buying food at a fast food establishment but I usually get a salad or a wrap. We need fast healthy restaurants. Vegetable Express? I only know of one Vegan restaurant in my area and it's not a drive-thur. Thanks for posting this!
